Lanzhou Spiced Beef
Lanzhou sauce beef is primarily made from beef shank. After blanching to remove腥味 (odor), it is simmered slowly with soy sauce, star anise, cinnamon, bay leaves, Sichuan peppercorns, and other spices and seasonings until the meat becomes tender and fully infused with flavor. It is then cooled and sliced for serving.
